    Patagonian toothfish wrapped in Grand Crue dry-cured ham, served on a bed of saffron risotto and fried broad beans. The Glacier 51 lives in abunt 1500 m depth in the Antarctic Sea  near the Kerguelen Islands between Southafrica and Australia. Due to sustainable longline fishing, heavy controles and a low bycatch, this fish receives the MSC-logo.
